We charge $7.85/lb hanging weight for a Whole Beef, this includes processing. See below for more info.

You can expect approximately 350 + lbs of beef, consisting of 20-25% steaks, 20-25% roasts, 40-45% ground beef, and 10-15% of other labeled cuts, and put in a high chill freezer.

A Whole Beef takes up about 16 cubic feet of freezer space.

Here's How It Works:

  • Secure your COW SHARE TODAY by placing your deposit!
  • We will handpick your beef and send you an estimated delivery/pickup date.
  • We will take your beef to the small, family-owned artisan processor. Your beef will dry age for 14-21 days before our expert butcher will hand-cut, package, and vacuum seal your beef in their USDA facility.
  • We'll email you the week before the delivery date with your hanging weight and total due.
  • Payment is due prior to pickup.
  • Your order will be available for pick up in El Reno at the processor.
  • Fill your freezer and enjoy local grass-fed beef year-round!

Hanging weight refers to dry-aging meat before it is cut up and processed. After it has been cured for a couple of weeks, the butcher will trim the meat and remove bones, etc. The end result is “cut & wrapped meat”, which is a much smaller amount of meat than you started with due to the trimming. Cows are like people, there’s some variety! You can expect 55 – 60% of the hanging weight as cut and wrapped meat.
