Balsamic and Dijon Chuck Roast

I'm a big fan of a slow cooker meal! Coming home to a meal already prepared is the best on a busy weeknight. This Balsamic and Dijon Chuck Roast is great for a cozy fall evening!
Ingredients
- (3-4 lb) Chuck Roast
- (2-3 T) olive oil
- (1 large) yellow onion, chopped
- (1/2 cup) balsamic vinegar
- (3 T) Dijon mustard
- (6 sprigs) fresh thyme
- (1 3/4 cups) beef broth
- salt and pepper
Directions
- Heat the olive oil in a large cast iron skillet or Dutch oven on high heat. Season chuck roast with salt and pepper, and place in pan to brown on all sides. Remove and set aside.
- Add chopped onions to the pot and lower heat to medium. After onions are soft add the balsamic vinegar and bring to a boil. The vinegar will reduce and become syrupy about 4-5 minutes. Stir in the Dijon.
- If using a slow cooker add the onion and balsamic mixture to the bottom of the cooker, then place the roast on top. Add the beef broth and thyme sprigs. Cover and cook on low for 8-10 hours or until the roast falls apart.
- During the last 40 minutes add carrots or potatoes to the slow cooker if desired.
