Crispy Beef Taquitos

Taquitos are a great snack or quick lunch for all your hungry family memebers! They can easily be frozen and warmed up in the oven!
Ingredients
- (1 lb) Ground Beef
- (1/2 small, chopped) onion
- (3, seeded and diced) jalapenos
- (3, minced) garlic cloves
- (1 1/2 t) chili powder
- (1 t) cumin
- (1/2 t) smoked paprika
- (1/2 t) salt
- (1/4 t) oregano
- (8 oz) cream cheese
- (2 cups, grated) Pepper Jack cheese
- (12) tortillas, medium
Directions
- Add beef, jalapenos, and onions in a large skillet and cook until meat is browed. Add garlic and saute for 30 seconds. Drain off extra fat.
- Stir in seasonings, then add salsa and cream cheese. Heat until the cheese is melted, then add 1 cup of the pepper jack cheese. Remove from heat.
- Add about a 1/4 a cup to the bottom third of a tortilla and top with a little of the leftover pepper jack cheese. Tightly roll up tortillas.
- Heat a tablespoon of olive oil in a skillet over medium heat. Add 2 or 3 taquitos to the skillet and cook until golden brown on all sides.
- Serve with salsa, sour cream, and guacamole!
