Peach Butter

Our family does a big family reunion every year where we get together and make a big batch of Apple Butter. This is a summer spin on our Apple Butter with fresh Colorado peaches. Perfect on a hot biscuit!
Ingredients
- (20) Fresh Peaches
- (1 cup) Sugar
- (1/2 - 1 cup) Water
- (4 T) Fresh Squeezed Lemon Juice
Directions
Peel and chop the peaches into large chunks.
Add the peaches, water, and sugar to a heavy pot.
Bring to a boil, then lower heat to medium and cook for 20 minutes until peaches are tender, stirring often.
Add the lemon juice to the peaches, then puree the fruit with an immersion blender or food processor.
After rinsing the pot, return the puree and bring to a boil.
Lower the heat to a simmer and cook until thick, about 25-30 minutes. Stir frequently.
At this point you can being canning the Peach Butter following your canning instructions or store in the refrigerator for 2 weeks.
We like to make small containers and give them to our neighbors, teachers, and friends!
