Shredded Beef Enchilades

Tender, slow-cooked beef, smothered in rich enchilada sauce, rolled in warm tortillas, and baked to perfection, these enchiladas are a mouthwatering delight that will transport your taste buds south of the border.

Ingredients
- Olive oil
- (1) Chuck Roast
- (1 package) taco seasoning (we love Siete)
- (1 28 oz can) enchilade sauce
- (8-12) flour tortillas
- (8 oz) shredded mild cheddar cheese
Directions
- Drizzle a little olive oil in your pressure cooker or slow cooker.
- Add one 1902 Legacy Meats Chuck Roast and sprinkle generously with your favorite taco seasoning—we love Siete.
- Pressure cook for 75 minutes, then allow the pressure to release for 10-15 minutes naturally (orn slow cooker for 8-10 hours on low)
- Shred the meat in the cooker once done.
- Preheat the oven to 350°F.
- Pour a little enchilada sauce into the bottom of a 9x13 baking dish.
- Fill each tortilla with shredded beef and a sprinkle of cheese, roll it up, and place seam-side down in the dish.
Pour the remaining enchilada sauce over the top and cover with more cheese. - Bake for 30 minutes, or until the enchiladas are hot and bubbly.
