Skillet Lasagna

Ingredients
- (2 T) olive oil
- (1 lb) Ground Beef
- (1 medium) onion, diced
- (3-4 cloves) garlic, minced
- (1T) tomato paste
- (1t) Italian seasoning
- (1 jar (24 oz)) marinara
- (1 (15 oz) pkg) whole milk ricotta
- (1) egg
- (1 t) salt
- (2 T) parsley, chopped
- (1/2 c) Parmesan cheese, grated
- (1 (12 oz) pkg) Oven Ready Lasagna Noodles
- (2 c) mozzarella cheese, shredded
Directions
1. Preheat oven to 350 degrees.
2. Brown ground beef for about 5 minutes then add the chopped onion; continue until there is no pink left in the beef.
3. Drain off any grease and add the garlic for 1 minute before adding in tomato paste and Italian seasoning.
4. Add in marinara and add about a 1/2 cup of water to the jar, seal and shake then add into the pan; stir and bring to a simmer.
5. In a small bowl stir together the egg, salt, parsley, and Parmesan.
6. Remove half the beef sauce to a prep bowl.
7. On the remaining beef sauce layer about 4 dry lasagna noodles evenly on top. Break apart to fit the pan, and fill in empty sides with broken lasagna pieces.
8. Dot the top of lasagna with the ricotta mixture and repeat layers until all ingredients end with the marinara as the top layer. Then top everything with the shredded mozzarella.
9. Spray a piece of foil with nonstick cooking spray and cover spray side down to cover the lasagna. Bake in preheated oven for 45 minutes. Top with chopped parsley and enjoy!
